Graphicsmods for AC can only improve/alter the game's appearance in one of two ways (to my knowledge): Weather. Post processing. If you're not running post processing (which is likely, as there's a substantial performance hit for VR even on light settings), then it's just the weather lighting presets that can have an effect.
Thelatest CSP (a mod for AC) has some great VR improvements. Combined with Opencomposite and OpenXR Toolkit, using FSR and FFR, I got a huge performance increase, which made it possible for me to crank up the graphics.
